Ingredients
- 2 pounds yellow split peas dried
- 4 quarts water
- 8 teaspoons lime juice
- 2 cup onions chopped
- 4 garlic cloves minced
- 2 teaspoons cumin seeds
- 2 teaspoons coriander ground
- 1 teaspoon cayenne
- 2 tablespoons salt
- 2 teaspoons sugar optional
Instructions
- In a large Dutch oven or stockpot, bring the split peas and water to a boil.
- Simmer gently, covered for about 1 hour or until peas have softened.
- Skim foam from the top as it cooks. Stir in remaining ingredients and continue to simmer for an additional 30 minutes.
- Check consistency and if necessary, thin with water.
- Ladle into 1-quart jars leaving 1 inch of headspace. Cap and seal. Place in the pressure cooker with 4 to 5 inches of hot water.
- Process at HIGH pressure for 1 hour and 30 minutes. Once done, allow pressure to come down naturally before opening the cooker.
